Chef Specialties makes these precision grinders in the USA. A spring mechanism locks in a consistent grind. The adjustable top knob (for the grind style) is embossed with a “P” for pepper. Note: Seven shaft sizes are now available. Order by the height of the shaft needed.

Classic Peppermill Mechanism
(As Used in Ted’s DVD: Making a Peppermill: Focus on Design) I use this peppermill mechanism exclusively for my traditional style peppermills, from 4″ mills to 18″ mills.
Chef Specialties makes these precision grinders in the USA. The grinder is made of stainless steel. A spring mechanism locks in a consistent grind. The adjustable top knob (for grind style) is embossed with a “P” for pepper. Note four sizes of shafts shown: 3 1/2″, 6″, 8″, and 12″. I have also added the 10, 14, and 18″ shafts (not shown)—order by the shaft height needed. The only difference between the sizes of kits is the shaft length. The grinding burr is the same size regardless of the shaft length. The finished mills will grind any spice besides pepper. I love to use one mill dedicated to crushed red pepper. The flavor and heat explode when ground fine. It makes your garden variety of prepackaged crushed red pepper transform into the lava of a spewing volcano!
